Harvested from late May through early September, each truffle reflects the region’s cool climate and fertile soils.
Beneath their rugged black exterior lies delicate white marbling, shaped by the season, the soil, and the expertise of skilled harvesters. Intensely aromatic with deep earthy and savory notes, Manjimup Black Winter Truffles reveal their fullest expression when shaved over warm dishes, releasing their unmistakable fragrance.
Chef Brandon Foo presents a specially curated three course menu celebrating the season’s finest truffles. Begin with Hokkaido Scallop & Bucatini in Black Winter Truffle Timbale. For the main course, indulge in Kakushi Black Angus Beef & Black Winter Truffle, before concluding with Riz au Lait en Croûte. Each course is thoughtfully paired with distinguished Bordeaux wines.
