MAISON with BRANDON FOO & KASKARA HASIBUAN

Pierre welcomes you into our Maison as we host Kaskara Hasibuan, who spent his formative years as an intern at two-Michelin-starred Atomix in New York and chef at three-Michelin-starred French Laundry in Napa Valley. Joined by Chef Brandon Foo, they're presenting a set dinner that reflects the idea and memories of home. The menu moves between French techniques and subtle Asian inflections, through dishes such as Comté Cheese Beignet, Citrus-Cured Japanese Hamachi, Kinmedai Pot-au-Feu and Toasted Rice Vol-au-Vent. Wines are thoughtfully curated by Kaskara, bringing in his discipline as a certified sommelier.
