LE BEURRE BORDIER
One of France's most celebrated butter houses has arrived at Pierre.
Maison Bordier has been crafting artisanal butter in Brittany since 1985 — hand-kneaded, shaped with titanium paddles, made from grass-fed milk sourced across Brittany, Normandie, and Pays-de-la-Loire. When my butter cries, it sings.
For two days only , Chef Brandon Foo has built a special menu around Bordier's legendary flavored butters — from the now-iconic Seaweed Butter, first introduced in 1986, to Buckwheat, Espelette, and Yuzu.
A Platter of Bordier Butters. Hokkaido Scallops Étuvée with Seaweed Beurre Blanc. Stockyard Gold Tenderloin with Truffle Gastrique. And Bordier Salted Butter & Sugar Crêpes to close.
