This Bastille Day, Pierre celebrates two icons of French tradition Le Tout en Croûte, “everything in crust”, where the finest cuts are wrapped in golden pastry, and Galettes au Sarrasin, savory buckwheat crepes born in Brittany.

Chef Brandon Foo brings his signature guéridon service tableside, the classic art of carving and finishing each dish right before you, with Beef Rossini en Croûte in Black Truffle and Madeira sauce, and Salmon en Croûte with Scallop Mousse and Caviar Bercy sauce.

Alongside it, is a tribute to the classics with a collection of elevated buckwheat galettes: Bayonne Ham with Comté and Egg, Heirloom Tomatoes with Duck Prosciutto and Stracciatella, and Bafun Uni with Burnt Cream and Trout Roe.
